- ½ teaspoon baking soda
- 1 teaspoon salt
- 1½ sticks (180 g; 6.3 oz) cold butter, diced, plus extra for greasing
- 1 cup (100 g; 3.5 oz) grated cheddar cheese
- 2 tablespoons chopped chives
- ¾ cup (185 ml; 6.2 fl oz) cream
Glaze
- 1 egg
- 3 tablespoons cream

1Preheat the oven to 200°C (392°F). Grease two baking sheets.

3Rub in the butter until the mixture resembles breadcrumbs.

4Stir in the cheese and chives.

5Add the cream to the mixture, a tablespoon at a time, and mix to a soft dough.
- Do not use all of the cream, as you need some for the glaze.

6Knead the dough on a floured surface until smooth.

7Roll out the dough to 2 cm (0.79 in) thick. Cut out 24 scones using a cookie cutter.
- You may knead and re-roll the scraps and cut out more.

8Transfer the scones to baking sheets.

9Mix the egg and cream in a small bowl for a glaze.

10Brush the scones with the glaze.

11Bake for 15-18 minutes until golden. Transfer the scones to a wire rack and leave to cool for 10 minutes.
