    The best way to approach this is by turning it into a process. Start by cutting the backs of all the shrimp first, then peel them all. Don't cut and peel one by one, since that will slow you down.

Tear away the shell in one piece leaving the tail and the first joint. Hold the flesh with one hand, squeeze the first joint gently with the other hand, and pull.

Most people prefer them crispy, dusting them lightly with corn starch and frying in hot oil.
