Roasted Parboil Potatoes Recipe
Ingredients:
* 4-6 medium-sized potatoes, peeled and cut into chunks
* 2-3 tablespoons olive oil
* Salt and pepper, to taste
* Optional: minced garlic, rosemary, or other herbs
Instructions:
Preheat your oven to 425°F (220°C).
Parboil the potatoes: Place the potato chunks in a pot of salted boiling water and cook for 5-7 minutes, or until they are partially cooked but still firm.
Drain the potatoes and pat them dry with a paper towel.
Toss the potatoes in a bowl with the olive oil, salt, pepper, and any optional herbs or spices.
Spread the potatoes out in a single layer on a baking sheet.
Roast the potatoes in the preheated oven for 20-30 minutes, or until they are golden brown and crispy on the outside and tender on the inside.
Remove from the oven and serve immediately.
