Traditional Recipes to Celebrate Kwanzaa
Jollof Rice:
Jollof Rice is a popular West African dish that is often served during Kwanzaa.
Ingredients:
* 2 cups long grain rice
* 1 can (14 oz) diced tomatoes
* 1 large onion, chopped
* 1 bell pepper, chopped
* 2 cloves garlic, minced
* 1 tsp smoked paprika
* 1 tsp curry powder
* 1 tsp thyme
* 1 tsp salt
* 1 tsp black pepper
* 3 cups chicken broth
* 2 tbsp vegetable oil
Instructions:
Rinse the rice in cold water and set aside.
Heat the oil in a large pot over medium heat.
Add the onion, bell pepper, and garlic and sauté until softened.
Add the diced tomatoes, paprika, curry powder, thyme, salt, and black pepper and stir to combine.
Add the rice and stir until coated with the tomato mixture.
Add the chicken broth and bring to a boil.
Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
Collard Greens:
Collard Greens are a staple in Southern cooking and are often served during Kwanzaa.
Ingredients:
* 2 bunches collard greens, stems removed and leaves chopped
* 6 slices bacon, diced
* 1 large onion, chopped
* 2 cloves garlic, minced
* 4 cups chicken broth
* 1 tbsp apple cider vinegar
* Salt and pepper to taste
Instructions:
In a large pot, cook the bacon over medium heat until crisp.
Add the onion and garlic to the pot and sauté until softened.
Add the collard greens and chicken broth to the pot and bring to a boil.
Reduce the heat to low, cover the pot, and simmer for 30-45 minutes, or until the collard greens are tender.
Stir in the apple cider vinegar and season with salt and pepper to taste.
Sweet Potato Pie:
Sweet Potato Pie is a traditional Southern dessert that is often served during Kwanzaa.
Ingredients:
* 1 9-inch unbaked pie crust
* 2 cups mashed sweet potatoes
* 1 cup brown sugar
* 2 eggs
* 1/2 cup milk
* 1/2 cup heavy cream
* 1 tsp cinnamon
* 1 tsp nutmeg
* 1 tsp vanilla extract
* Pinch of salt
Instructions:
Preheat the oven to 350°F.
In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, eggs, milk, heavy cream, cinnamon, nutmeg, vanilla extract, and salt. Mix until well combined.
Pour the mixture into the unbaked pie crust.
Bake for 50-60 minutes, or until the filling is set and the crust is golden brown.
Remove from the oven and allow to cool before serving.
