Ingredients: 1 mango, peeled, depitted, and diced ½ cup passion fruit pulp, seeds removed (about 4 passion fruit) ¼ cup honey or agave syrup 2 Tbsp. fresh lime juice 1 cup ice ½ cup coconut water or milk of your choice Instructions: 1. Using a Y-shaped peeler, peel the mango from top to bottom, working your way around the entire fruit. Use a towel to help you keep your grip as you expose more of the flesh. Use the peeler to remove the tips of the mango. Once your mango is peeled, look for the tallest side of the mango: that’s where the pit will be. Using a chef’s knife and holding your towel to grip, carefully slice off the flesh of the mango, avoiding the pit. You may have to do a few slices to get all of the flesh off. Discard the pit and skin, and dice up the rest of your mango. 2. Slice all of your passion fruits in half, spoon out the pulp, then strain pulp in a non-aluminum sieve to remove seeds. 3. Add diced mango, passion fruit pulp, and remaining ingredients to a blender and blend on high speed until smooth. Pour into glasses and serve. Yields 2 smoothies.
