Make a passion fruit jelly to eat on toast or to use as a glaze for meats like chicken or pork. Using about 16 ripe passion fruits, separate the juice from the seeds. You will need about ⅞ cups of passion fruit juice, as well as 2 Tbsp. seeds. Combine the juice with ⅓ cup sugar and heat in a saucepan, stirring, until the sugar has completely dissolved. Remove from heat. Place 2 sheets of gelatin in cold water and let soak for 5 minutes, until soft. Add the gelatin to the juice mixture and stir until it melts. Still in the passion fruit seeds. Pour into jars or molds to set. Chill for at least 1 hour.
Make a passion fruit mustard as a dip for shrimp for a savory, spicy twist. Boil 1 cup passion fruit juice with 1 red Thai chile, sliced in half, for about 20 minutes or until reduced to ¼ cup. In another saucepan, toast ½ tsp. cumin seeds over medium heat until fragrant. Add 3 Tbsp. honey and 1 coarsely chopped green Thai chile and bring to a simmer, then remove from heat and let stand for 15 minutes. Strain, and stir in 1 tsp. water. In a bowl, blend 1 Tbsp. dry mustard with 2 tsp. water, and let stand for 5 minutes. Stir in 1 Tbsp. dijon mustard. Add the reduced passion fruit juice to the mustard mix, and season with salt to taste.
Make a passion fruit curd that can be eaten on toast or used as a sweet and creamy filling or icing for many desserts. Using a double boiler, combine ½ cup butter with ¼ cup castor sugar over medium-low heat. In a separate bowl, mix ½ cup passion fruit pulp, 2 Tbsp. lemon juice, and 4 eggs. Add to the butter-sugar mixture and stir continuously over medium-low heat until mixture thickens, about 10-12 minutes. Remove from heat and allow to cool completely.
Simmer chicken breasts in a passion fruit sauce made from 1½ cups chicken broth, 1½ cups passion fruit pulp, ⅔ cup brown sugar, 1 cup passion fruit juice, 2 Tbsp. apple cider, 1 Tbsp. vinegar, and 1 Tbsp. soy sauce.
Make a tart and sweet salad dressing by combining ¼ cup passion fruit puree, ½ cup olive oil, 1 Tbsp. lime juice, 1 Tbsp. vinegar, 2 Tbsp. honey, and ¼ tsp. salt.
