Enchiladas Shopping List
For the filling:
* 2 cups cooked and shredded chicken, pork, or beef
* 1 can (15 ounces) black beans, drained and rinsed
* 1 can (4 ounces) diced green chilies
* 1/2 cup chopped onion
* 2 cloves garlic, minced
* 1 teaspoon ground cumin
* 1 teaspoon chili powder
* Salt and pepper to taste
* 2 cups shredded cheddar or Monterey Jack cheese
For the sauce:
* 2 tablespoons vegetable oil
* 2 tablespoons all-purpose flour
* 1 tablespoon chili powder
* 1/2 teaspoon ground cumin
* 1/2 teaspoon garlic powder
* 1/4 teaspoon dried oregano
* 2 cups chicken or vegetable broth
* Salt and pepper to taste
For assembling:
* 12-16 corn tortillas
* Chopped fresh cilantro for garnish (optional)
* Sour cream for serving (optional)
Note: You can use store-bought rotisserie chicken or pre-cooked shredded meat to save time. You can also use canned enchilada sauce instead of making your own.
