Need an easy way to make fried rice

I dont make a lot of fried rice but when I do I love adding shrimp and other seafood, and keeping the seasoning simple. My biggest tip is to use day-old drier rice!

Fried rice was created as a food waste recipe, where somebody may have cooked too much rice and doesn't want to throw it away. I think fried rice is really one of those catch-all recipes. It could be vegetarian, you could add seafood or shellfish to it, or you could also add chicken, beef, etc.
But if somebody's learning how to make fried rice, I would probably start with just the rice - the already-cooked rice that you've made the day before and has been refrigerated. You get a hot pan with a little bit of oil in it and learn to toast the rice and what flavors you like in it. Make sure that if you don't like too much soy, start adding more as you build up your recipe.
You can saute in a saute pan or wok, the meat and vegetables very quickly, at very high heat, and then add your already cooked rice into it. You want to toast it quickly in the pan. And then it's up to you, flavor-wise. If you want to go with an Asian style, I love adding lots of garlic and ginger, scallions, and peppers. And I like to add a little sesame oil, soy sauce, and also a fried egg into it. I also really like adding fresh herbs like cilantro to finish it.
Personally, I really like a touch of sesame oil, soy sauce, maybe a little bit of rice wine vinegar or mirin, or lime juice to add a little acidity. But other people I've seen make fried rice with oyster sauce or with a hoisin sauce. They really enjoy that as well.

2. The next day, set your stove to medium heat and warm up 1/2 tablespoon of oil in a large pan until it shimmers.
3. Add in 2 beaten eggs and scramble them for about 2 minutes. Transfer the eggs to a plate.
4. Add another tablespoon of oil to the pan and 1 cup of chopped onion, 4 cloves of garlic, and a pinch of salt and pepper. Cook until the onion softens, about 5 minutes.
5. Toss in your rice, 1 cup of frozen peas and carrots, and about 2 tablespoons of soy sauce until everything is warm.
6. Mix the eggs in to reheat them, and start eating immediately!

Homemade fried rice is super easy! Start with cold, leftover rice (it fries better), then saute garlic, onion, and veggies in oil. Push them aside, scramble an egg, then mix everything together. Add your rice, soy sauce, sesame oil, and a pinch of salt. Stir-fry for a few minutes, and you're done! For extra flavor, toss in chicken, shrimp, or tofu. Enjoy!

Adding Chinese sausage to my fried rice totally helped elevate it to restaurant quality! (Okay maybe it's not that good...but I'm getting pretty close.) I had always wondered what the little meat cubes in my favorite fried rice were, and figuring out it was Chinese sausage was a game changer. Yeah, I scramble the egg first, then put it aside, then saute vegetables (I usually do frozen carrots/peas, chopped celery, onion, garlic) in butter, then add the cold rice and some soy sauce and mix in all together, add the egg back in with a splash of sesame oil, and boom, restaurant quality fried rice for a fraction of the cost.

I like to make the eggs before I even add rice to the pan. First, I beat 2 eggs together in a bowl so the yolks and whites are combined. Then, I warm up a pan over medium heat and scramble the eggs for a couple of minues. After that, I add the rice and veggies and that's it!

You refrigerate the rice overnight so it's not as soggy or sticky and it fries up better. I leave it uncovered n the fridge so it can dry out a bit. You could also use a 1:1 ratio of rice to water when you cook the rice if you want to use it right away instead of making it a day ahead.

You want the rice to be a day old so it can dry out a little. Fresh rice will not absorb the seasoning as well. Plus, the drier rice will give you the texture you are used to when eating fried rice.
