When I look at my wikiHow contributions (via My Profile), it shows what I've done along with some numbers in brackets. What do they mean?

Those numbers indicate how many bytes were added or taken away from the page. Having bytes taken away isn't necessarily a bad thing, and having bytes added isn't necessarily a good thing (although it can be.) It depends on what was added or taken away.

They're likely just young children playing on their parents' mobile devices. Others might be experimenting and testing the system's ins and outs to see what each button does.
