    People with mental disabilities are going through a lot more internally than it appears. Their lives can be so difficult and they constantly struggle to be happy every day. Try to understand this and be grateful that your life isn't normally like this. Just ignore them in a peaceful manner or do something kind for them. They need kindness since most people don't understand their internal suffering.

    Such a reply sends the message you don't care much about this line of conversation. Not offering your own topic sends the message you, in addition, don't like this person, especially if 'okay' is literally all you say in response. Yes, it is quite rude. Try replying with a full sentence, offer some small talk topics in return, and keep conversations short.
