Simmered Pork Neckbones Recipe
Ingredients:
* 2-3 lbs. pork neck bones
* Salt and pepper
* 2 tbsp. vegetable oil
* 1 onion, chopped
* 2 garlic cloves, minced
* 2 bay leaves
* 1 tsp. dried thyme
* 1 tsp. paprika
* 1/2 tsp. cayenne pepper
* 4 cups water or chicken broth
* Chopped fresh parsley, for garnish (optional)
Instructions:
Season the pork neck bones generously with salt and pepper.
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
Add the pork neck bones to the pot and sear on all sides until browned, about 5-7 minutes.
Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes, until softened.
Stir in the bay leaves, dried thyme, paprika, and cayenne pepper.
Pour in the water or chicken broth, and bring the mixture to a boil.
Reduce the heat to low and let the pork neck bones simmer for 2-3 hours, or until the meat is tender and falling off the bones.
Remove the pork neck bones from the pot and let them cool slightly before removing the meat from the bones and discarding any fat or gristle.
Return the meat to the pot and simmer for an additional 10-15 minutes to allow the flavors to meld.
Serve the simmered pork neck bones hot, garnished with chopped fresh parsley if desired.
