Need an easy way to make fried rice

Here's what I do for my favorite fried rice recipe!

1. THE DAY BEFORE add 4 cups of water and 2 cups of rice to a pot and bring it to a boil. Cover and simmer the pot for about 20 minutes until the rice absorbs the water. Stick it in the fridge overnight.
2. Set your stove to medium heat and warm up 1/2 tablespoon of oil in a large pan until it shimmers.
3. Add in 2 beaten eggs and scramble them for about 2 minutes. Transfer the eggs to a plate.
4. Add another tablespoon of oil to the pan and a cup of chopped onion, 4 cloves garlic, and pinches of salt and pepper until the onion softens, about 5 minutes.
5. Toss in your rice, a cup of frozen peas and carrots, and about 2 tablespoons of soy sauce until everything is warm.
6. Mix the eggs in to reheat them, and start eating immediately!

why do you want the rice to be a day old instead of fresh

You refrigerate the rice overnight so it's not as soggy or sticky and it fries up better. I leave it uncovered n the fridge so it can dry out a bit. You could also use a 1:1 ratio of rice to water when you cook the rice if you want to use it right away instead of making it a day ahead.

I like to make the eggs before I even add rice to the pan. First, I beat 2 eggs together in a bowl so the yolks and whites are combined. Then, I warm up a pan over medium heat and scramble the eggs for a couple of minues. After that, I add the rice and veggies and that's it!

Yeah, I scramble the egg first, then put it aside, then saute vegetables (I usually do frozen carrots/peas, chopped celery, onion, garlic) in butter, then add the cold rice and some soy sauce and mix in all together, add the egg back in with a splash of sesame oil, and boom, restaurant quality fried rice for a fraction of the cost.

Make your fried rice with brown rice if you want to be a little healthier. Brown rice is generally more nutritious than white rice. It contains vitamins, fiber, and beneficial fatty acids that white rice does not.

Think about which oil you're using. Not every oil's flavor will complement the other ingredients in the rice. Olive oil especially tends to have a strong flavor and may clash with other ingredients.

Use leftover white rice. It works like charm. The texture is much better for fried rice as it is dryer and doesn't clump like fresh-cooked rice does.
