Ingredients
- 1 cup (250 g) almond butter
- ½ cup (80 g) carob powder
- ½ cup (1 ea. / 125 g) mashed banana
- Nuts of your choice (e.g., walnuts, pecans)
- 2 teaspoons vanilla extract
- Coconut flakes (optional)
Steps

Combine all ingredients except coconut flakes. Put the almond butter, carob powder, mashed banana, nuts and vanilla in a medium-sized mixing bowl and mix together to combine. The consistency should resemble like a dough.

Shape into little balls. Take teaspoonfuls of dough, and using your fingers, roll into balls.
- If you want, put some coconut flakes into a bowl and roll carob balls in coconut flakes.

Arrange on a lined plate or baking sheet. Line a plate or baking sheet with parchment paper and put the balls into the prepared plate or baking sheet.

Chill the balls in the refrigerator until firm. This should take at least 30 minutes.

Serve chilled. Store those not consumed in the fridge for up to 5 days, in a sealed container. But it will be hard to try not to eat all of them in one sitting!
