Chicken parmesan lasagna is a unique blend of two Italian favorites brought together to make a fun and delicious meal. Ingredients

  • 1 box of 12 dried no boil lasagna sheets
  • 2 tablespoons of olive oil
  • 2 cups of all purpose flour
  • 2 cups of breadcrumbs
  • 3 large eggs
  • 24 ounces of tomato sauce
  • 1 cup of ricotta cheese
  • 1 cup of shredded parmesan cheese
  • 2 cups of shredded mozzarella cheese
  • 4 thin cut chicken breasts

Steps

  1. Preheat the oven to 375 °F (191 °C).
  2. Place ¼ inch of tomato sauce at the bottom of the pan. This should cover the entire bottom of the pan. Add the first layer of lasagna sheets on top of the sauce covering the whole pan.

  3. Place a layer of ricotta cheese, then add a layer of tomato sauce, followed by a layer of shredded mozzarella, a layer of shredded parmesan cheese, and lasagna sheet layer. Repeat this twice and then set the dish aside.
  4. Crack three eggs into the first large bowl and whisk. Fill the second bowl with 2 cups of breadcrumbs. Fill a third bowl with two cups of flour.
  5. In a separate frying pan add 2 tablespoons of olive oil and bring to medium heat. Take the chicken breasts and dip them into the flour, egg wash and breadcrumbs in that order. Then carefully place the chicken into the frying pan. Let the chicken cook on each side for two minutes on medium heat.
    • The chicken will not be fully cooked at this time. This is done to give the crisp outside breading, the cooking will occur in the oven.
  6. Place 2 chicken breasts on the last lasagna sheet placed in the deep dish pan. Place a layer of ricotta cheese, then add a layer of tomato sauce, followed by a layer of shredded mozzarella, a layer of shredded parmesan cheese, and lasagna sheet layer. Then proceed to place the last two pieces of chicken.
  7. Top with a final layer of tomato sauce, ricotta cheese, shredded parmesan and shredded mozzarella. Place in the oven for 35-40 minutes or until the internal temperature is 165 °F (74 °C). Take it out of the oven and let cool for 5-10 mins before serving. Enjoy!
