    My favorite way is to wash the potato well, poke a few holes around the potato with a fork, then coat the potato skin in olive oil. It doesn't take a lot, just enough to moisten the skin, then sprinkle salt over the skin. Wrap the potato tightly in aluminum foil and bake in a 350ºF/180ºC oven until done. The skin stays moist and delicious!
