Yes, she will get the email as it's her account. To avoid this, simply create your own Amazon account and link a prepaid credit card to it. You will get the receipt as well as linking devices such as Fire tablets and Amazon Echo devices.

Then, connect the phone to a computer (even a school Mac) and erase the phone. Then don’t sign in to Apple ID service or create a new Apple ID with a fake birthday. You can shop freely once this is done.
