If your substrate was a concrete backer board, you should be able to scrape the thin-set off of it with a putty knife without causing too much damage.

After removing the tiles, gently scrape off the old adhesive. You may have to repair walls with plaster.

If you're using decorative tile, like a wainscot or a backsplash, you can install it on drywall. However, if your tiling a shower wall or bathtub surround, use concrete backer board with a moisture barrier behind it. That will keep moisture from getting into the wall cavity and the wall framing.

I recommend just tearing apart the shower walls. Doing this will be much faster than removing each tile individually. Plus, the substrate will likely be damaged from the removal regardless of how careful you are.
