    It depends. If you use robusta beans, you most definitely want to blend them with some Arabica beans as 100 % robusta coffe gets too harsh. It is recommended to have 70% Arabica and only 30% robusta for an espresso blend.

    Either is fine, it's just that neither is preferable compared to other options. The instructions in the above article are for a regular setting, but convection is fine, really -- you just have to remember to stir it more often.
