Ramen with Egg Recipe
Ingredients
* 4 packets of ramen noodles
* 4 large eggs
* 4 cups of water
* 4 cups of chicken or vegetable broth
* 2 cloves of garlic, minced
* 1-inch piece of ginger, grated
* 1/4 cup of soy sauce
* 2 tablespoons of rice vinegar
* 2 tablespoons of vegetable oil
* 1 tablespoon of sesame oil
* 1/4 teaspoon of black pepper
* 1/4 cup of chopped scallions
* 1/4 cup of chopped cilantro
Instructions:
In a large pot, bring the water and broth to a boil over high heat.
Add the garlic, ginger, soy sauce, rice vinegar, vegetable oil, sesame oil, and black pepper. Reduce the heat to low and simmer for 10 minutes.
Cook the ramen noodles according to package instructions. Drain and set aside.
While the noodles are cooking, bring a separate pot of water to a boil. Carefully add the eggs to the boiling water and cook for 6-7 minutes for a soft-boiled egg.
Remove the eggs from the pot and immediately place them in a bowl of ice water. Allow them to cool for a few minutes before peeling.
Divide the cooked noodles between four bowls. Pour the broth over the noodles.
Top each bowl with a soft-boiled egg and sprinkle with scallions and cilantro.
Serve hot and enjoy!
Optional variations: You can add other toppings to your ramen such as sliced mushrooms, bok choy, bean sprouts, or shredded chicken. You can also adjust the amount of soy sauce and rice vinegar to taste.
