Sweet potato hash: Use a grater to grate a washed and peeled sweet potato into small pieces, then dice an onion. Saute both on the stove top with some olive oil, pressing down with a spatula until the sweet potatoes are browned, then flipping and cooking the other side until it’s brown too. Top with a fried egg, sliced avocados, and hot sauce (optional). Breakfast tacos: Start with corn or flour tortillas, then add fillings such as bacon, egg, and cheese; refried beans and cheese; or potato, egg, and cheese. Top with salsa and serve with a side of cantaloupe. Scrambled eggs and sausage: To make your eggs even more filling, add some grated cheddar cheese to the pan when they are almost cooked. This high protein meal goes great with a side of sliced oranges. Whole wheat waffles: Use a whole wheat flour instead of all purpose to make your waffle batter more filling. If you don’t have a waffle maker, then you can do pancakes instead. Add fruit such as strawberries or blueberries to the batter. Top with maple syrup, almond butter, or chocolate-hazelnut spread, and serve with a side of turkey bacon. Oatmeal: Make oatmeal using whole rolled oats and whole milk. Top with almond butter, granola, and honey. Serve with a side of mixed berries. Greek yogurt parfait: Layer whole milk Greek yogurt with sliced berries and granola, filling up a glass, then top with a honey drizzle.
