Classic Red Beans and Rice Recipe
Ingredients:
* 1 pound dried kidney beans
* 1 onion, chopped
* 1 bell pepper, chopped
* 3 stalks celery, chopped
* 3 cloves garlic, minced
* 1 bay leaf
* 1 tablespoon dried thyme
* 1 tablespoon smoked paprika
* 1 teaspoon cayenne pepper
* 1 pound andouille sausage, sliced
* 6 cups chicken broth
* 4 cups cooked white rice
* Salt and pepper to taste
Instructions:
Rinse the dried kidney beans and soak them overnight in water.
Drain and rinse the beans and place them in a large pot with the onion, bell pepper, celery, garlic, bay leaf, thyme, smoked paprika, and cayenne pepper.
Add the andouille sausage and chicken broth to the pot and bring to a boil.
Reduce the heat and simmer for 2-3 hours, or until the beans are tender.
Serve the red beans over cooked white rice, and season with salt and pepper to taste.
