Stovetop Pinto Beans Recipe
Ingredients:
* 1 pound dried pinto beans
* 6 cups water
* 1 onion, chopped
* 2 cloves garlic, minced
* 2 tbsp vegetable oil
* Salt and pepper to taste
Instructions:
Rinse the dried pinto beans under cold running water and remove any debris or shriveled beans.
In a large pot, bring 6 cups of water to a boil over high heat.
Add the rinsed beans to the pot and boil for 2 minutes.
Remove the pot from the heat and let it sit for 1 hour.
Drain the beans and rinse them again with cold water.
In the same pot, heat the vegetable oil over medium-high heat. Add the chopped onion and minced garlic to the pot and sauté for 1-2 minutes until fragrant.
Add the drained beans to the pot and stir to combine with the onion and garlic.
Pour enough water into the pot to cover the beans by about 1 inch.
Bring the pot to a boil and then reduce the heat to low. Simmer the beans for 1-2 hours or until they're tender and fully cooked.
Season the beans with salt and pepper to taste.
Serve the beans hot as a side dish or use them in your favorite recipes.
