Cheesy AM Tacos
Ingredients:
2 large eggs
2 large egg whites
2 tbsp. shredded cheddar cheese
½ cup canned black beans, drained and rinsed
2 6-inch whole wheat flour tortillas (or 4 corn tortillas)
4 tsp. salsa
Directions:
* Whisk eggs and egg whites together in a bowl
* Grease a medium nonstick skillet with cooking spray and set to medium heat
* Pour the eggs into the skillet and stir while cooking until almost set desired scramble-consistency is reached
* Fold in the cheese and beans
* Heat tortillas in the microwave for 30 seconds (or less) until warm
* Transfer tortillas to a plate and spoon the scramble evenly onto each tortilla
* Top with salsa
* Enjoy at home or wrap in foil to enjoy while on-the-go
Avocado Toast
Ingredients:
2 slices bread, whole grain, toasted
Avocado, sliced
Salt
½ tbsp butter (optional)
Drizzle of olive oil
Directions:
* Toast bread slices
* Spread the butter evenly onto each piece (optional)
* Slice an avocado in half, remove the pit, and scoop out the flesh
* Slice the flesh and spread onto each piece of toast
* Drizzle with olive oil
* Sprinkle with salt and pepper to taste

English Muffin Toasts
Ingredients:
1 whole wheat english muffin
½ cup ricotta cheese (or cottage cheese)
1 tbsp. honey
4-5 small strawberries
Directions:
* Use a serrated knife to slice the english muffin in half
* Toast the muffin halves in the toaster until the edges are golden brown
* Transfer the toasted halves onto a plate and allow them to cool for a few minutes
* Mix the ricotta (or cottage cheese) and honey together in a small bowl
* Spread evenly onto each piece of muffin toast
* Thinly slice strawberries and place on top

Breakfast Box To-Go
Ingredients:
1 large hard-boiled egg
¼ cup almonds
½ cup lowfat cottage cheese
½ cup blueberries or strawberries
4 whole grain wheat crackers
Directions:
* Place each ingredient in separate resealable bags or small tupperware containers and place in a lunch box
* Don’t forget a spoon for the cottage cheese!
Portable Parfait
Ingredients:
1 cup plain nonfat yogurt
½ cup blueberries
½ cup strawberries
¼ cup granola or whole grain cereal
Directions:
* Thinly slice the strawberries and place in a tupperware container with an airtight lid
* Top with half of the yogurt
* Wash blueberries and add them on top
* Cover the berries with the remaining yogurt
* Top with granola or cereal
* Don’t forget to pack a spoon!
