    Most motherboards have a shortcut key that opens the boot device menu (where you can select which drive the motherboard looks to boot the computer from). It's possible that you're hitting this key, instead of the BIOS key. Try other common BIOS keys such as Delete, F11 and Escape. Otherwise, you should see a splash screen with the logo of your motherboard's manufacturer as the computer boots, and in the lower corner the keys to launch the BIOS are often listed, so you don't have to guess.

    Most BIOS set up panels have two radio buttons somewhere at the bottom of the screen page that reads off - "Save" & "Exit." Any system changes you might make you need to save the file and then click on the exit button. You need to be careful based around the BIOS set-up. Any changes you make will be the new value at the next boot/post. Your computer might not even start or boot up due to those value changes, especially around the selections of the drives.
