Pizza: Pizza is an easy thing to serve if you don’t have time to cook. You can order delivery for a crowd-pleasing meal. Just remember to get a variety of toppings. Popular ones include plain cheese, pepperoni, veggie supreme, meat supreme, and Hawaiian (pineapple and ham).
Hot dogs: Fire up the grill for a delicious way to prepare this simple and popular food (or cook them on the stove top in a little oil if grilling isn’t practical). Be prepared to have at least two dogs per person, and maybe more depending on what kind of appetites the teens have. Set out lots of condiments: yellow mustard, dijon mustard, ketchup, relish, diced onions, diced tomatoes, and celery salt are all great staples.
Burgers: As with the hot dogs, burgers can be prepared on the stove top or grill. If you know you have some vegans or vegetarians attending the party, you can also pick up some veggie burgers at the store. Stock up on toppings such as cheese slices, pickles, ketchup, mayo, mustard, sriracha, barbecue sauce, sliced onions, sliced tomatoes, and lettuce.
Loaded nachos: Place a single layer of tortilla chips on a large baking sheet and top with shredded cheese, cooked taco meat, black beans, and pickled jalapenos. Bake in the oven until the cheese melts, then top with diced tomatoes, shredded lettuce, sliced avocados, and more. Serve with fresh salsa and sour cream.
Chicken and veggie quesadillas: This is another great option that you can make with and without meat. Using a medium saucepan with a little oil, place a flour tortilla on the pan and top with your fillings (shredded cheese, and seasoned chicken or veggies such as onions, bell peppers, and mushrooms). Place another tortilla on top, cook for about two minutes, then flip and cook for about one more minute, or until the tortillas are crispy and the cheese is melted.
Spicy tofu lettuce wraps: If you know you have a lot of non–meat eaters attending the party, spicy tofu lettuce wraps make a delicious (and also gluten free and Paleo) option. Cube firm tofu, then pan fry in vegetable oil until golden brown. Top with a sauce made from hoisin, soy sauce, rice vinegar, and sesame oil. Serve on butter lettuce.
Shrimp kebabs: If you’re grilling, shrimp kebabs are a fun choice. Marinate peeled and deveined shrimp in olive oil, garlic, oregano, lemon juice, and lemon zest, and season with salt and pepper for at least 30 minutes. Place the shrimp on bamboo skewers with cubed yellow squash and zucchini, and grill until the shrimp is pink.
Texas chili: Brown ground beef and remove from pan, then cook a diced white onion until soft. Stir 2 minced garlic cloves into the pan with the onion, then add chili powder, a bay leaf, cumin, smoked paprika, oregano, salt, and pepper. Add the cooked beef back to the pan. Add a can of diced tomatoes and a small can of tomato paste. Add 1 cup of beef broth and simmer for 30 minutes. Add another cup of beef broth and ⅓ cup of water, and simmer for 30-40 more minutes. Top with shredded cheddar cheese, sour cream, and Fritos.
