- 2 cups (300 g) pancake mix
- 2/3 cup (160 ml) milk
- 2 eggs
- 1/2 cup (150 g) maple syrup
- 2 cups (275 g) all-purpose/plain flour
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- Pinch of salt
- 2 cups (500 ml) buttermilk
- 1 egg
- 1/4 cup (1/2 stick; 60 g) of melted butter
- Maple syrup, slightly warmed
- 3 cups (680g) pancake mix
- 1 cup (225g) sugar
- 2 1/2 cups (600 ml) water (an possibly a little extra to form batter, eyeball it)
- Shortening or margarine

Preheat the oven to 180ºC/350ºF. Prepare a muffin pan with nonstick spray or cupcake cases.

Transfer the batter to the muffin pan. Using a spoon or scoop, fill the muffin holes about two thirds each.
