I am very impressed by your work and I want to recreate it; however, I'm stuck at the point where you first lay out wool. Any ideas?

The wool just serves as a guide for where the building will go. For the castle, the wool just forms a series of boxes. The bottom box is five blocks high, and the others are four blocks high, and each one is a bit shorter than the one below it. For the house, the wool forms a line to plan out where the roof goes.

I'm trying to make it exact because I find it hard to translate what you've done to another situation. What were the dimensions you started with at the base with regard to width and length?

The base for the house is 13 x 17. The initial layout of logs for the pagoda is 21 x 21. I'm not quite sure how wide I made the castle, but both dimensions will be an odd number.

I built a house and want to use bamboo (1.14 update). Any tips on using it?

I find that bamboo looks incredibly cute when placed into a flowerpot! Place some bamboo around the house, use command blocks if you want. But if you do use them, make sure the bamboo is high enough. Then place the command block on top and it won't grow anymore.
