Grass, unless going dormant or about to die will not stop growing. Creating a space between the lawn and sidewalk won't stop the grass from growing.

There used to be an old method of using a length of string to obtain a perfect straight line for shaping a lawn - does anyone know what that is/was?

Try pounding a stake into each end of where you want your line, then tightly stringing twine between them -- this will give you a straight line to follow. Just make sure you're not moving the string as you work. Look in older gardening books for illustrations of this technique.

Is there a correct direction (right to left or left to right) when trimming around flower beds so that the grass doesn't go into the beds?

When using a weed wacker, go right to left as the string rotates clockwise therefore pushing the cut grass back into the lawn. Also, you can go parallel to the flower bed with the bed being on your left and walking forward.
