Two questions: 1. Even if they are basically ornamental, are they tasty (and safe) to eat, or not? 2. How long does it take to start fruiting, just one season, or more?

For number one, while they are edible, they may be too acidic to be tasty, or too hard at the core, therefore they're best used as decoration. For number two, if you cut the top of the pineapple and plant it, it takes 1-2 years for the propagated plant to start bearing fruit.

Based on your question, I gather that flowers actually sprout out of those mini pineapple eyes? Since they are decorative and you like how it looks like, keep them. You are just instructed to get rid of anything that has been showing spoilage and would not look pretty. Ripe fruit also takes lots of energy from its parent plant.

Check the fertilization of the soil. Also, make sure you are not watering it too frequently or infrequently. The temperature also matters, if you are living in a cold area, growing a tropical fruit is more difficult than growing one suitable for your conditions. You may have to prune it as well.
