If you don't have those, get a very sharp knife and lightly outline your letters (you can use a toothpick as well). Once you have the letters how you like, score your lines with the sharp knife (gently, so you don't pull the dough) over and over until they're cut. You can use the blade of your knife to lift the dough off your work surface.
