You don't happen to know how to turn down Zoom's volume specifically, do you? It doesn't look like there's a setting for it; the speaker volume slider in Zoom changes the computer volume.

If you have Windows 10, you may be able to press [Windows Key] + [G] to access the Xbox Game Bar. In the top of the screen, there should be a bar with different icons. Click the audio button. A window (with volume sliders for each app you have open) should appear. Slide the master volume to change the computer volume, slide each individual app slider to quieten particular apps.

If you get prevented from speaking on a Zoom meeting, you can’t unmute yourself unless the host lets you. So basically, you can’t.

It just happened that I unmuted all participants through 'mute all'-button and two participants although they had the microphone-icon crossed out, they could still talk? Does have anyone an idea?

Perhaps it was a glitch or lag. Sometimes if a participant is suddenly muted while they are unmuted and creating noise (talking, making annoying sounds, etc.), they may be able to talk through the mute icon for a few seconds before they are actually muted.

If host unmutes all and set the setting for participants to not be able to unmute themselves, then there is no way a participant can unmute himself. In that case, use chat to leave a message. Otherwise, as a participant, you can always go to the microphone in the bottom corner to unmute yourself.

The spacebar to unmute function would be super useful if it were reliable. Sometimes it works, and sometimes it doesn't. Even within the same session, sometimes it works for a while and then doesn't.

It could be a problem with the spacebar key. Check whether your spacebar key works even while typing something or if it only it happens in Zoom. If it happens only in Zoom, then just uninstall it and install it again to remove the issue.
