They will not explode if you paint them, they might decompose faster, but I've painted pumpkins and all that happens is that the paint eventually chips off and the pumpkin decomposes

Is sealant necessary if the pumpkin is strictly kept indoors?

You don’t have to use sealant but spraying some type primer onto the pumpkin before you paint it gives the paint something to stick to. And sealing it keeps the paint from peeling and cracking off after dried.
