The term itself is an idiom that comes from lumber yards; "grain" is the lines that appear on a board when cut. If you run your hand down a piece of lumber going in the direction of the grain, it feels smooth; if you rub your hand in the opposite direction--against the grain--you'll get splinters. You can use the same technique to determine the direction to shave. The direction that you run your hand across your skin and your hair lies smoothly is with the grain; the direction that makes your hair stand up and feel prickly is the opposite, against the grain.
