I am conversing with someone who speaks English but is heavy on the Norwegian accent and I am having trouble understanding them. Any ideas?

How, exactly, do you pronounce grønnsaker?

Basically, pronounce it as it's spelled. The ø makes the "u" sound similar to the u in "burn". This is the emphasized part of the word.

I am trying to write a English speaker with a Norwegian accent, and one of the things I heard about are the rolled R's. Are there any other quirky pronunciations I could incorporate?

Keep in mind, if you're writing someone's accent, first listen to people from that country speak, it is incredibly revealing. Rolled R's? Yes, but more out of habit, much like in Russian, and are not mandatory at all most of the time, try to focus on getting the vowels in particular, Norwegian is about as rich as English, but has variety in length of vowel sounds. In short, listen to people who speak Norwegian (as simple as watching a Norwegian YouTube video), and focus on vowels, for instance, *instaans*, or *inshtaanseh* for 'Instance'.
