Goose Breasts with Berry Sauce Recipe
Ingredients:
* 2 goose breasts
* 1 cup mixed berries (such as blueberries, raspberries, and blackberries)
* 1/4 cup balsamic vinegar
* 1/4 cup honey
* 2 tablespoons olive oil
* Salt and pepper, to taste
Instructions:
Preheat a grill to medium-high heat.
Season the goose breasts with salt and pepper on both sides.
In a bowl, whisk together balsamic vinegar, honey, and olive oil.
Brush the goose breasts with the balsamic mixture.
Grill the goose breasts for 6-8 minutes on each side, or until cooked to your desired doneness.
While the goose breasts are cooking, prepare the berry sauce. In a small saucepan, combine mixed berries and a splash of water. Cook over medium heat until the berries break down and release their juices, about 5-7 minutes.
Add the balsamic vinegar and honey to the berry mixture, and cook for an additional 5-7 minutes, stirring occasionally.
Once the goose breasts are done, remove them from the grill and let them rest for 5 minutes.
Slice the goose breasts and serve hot with the berry sauce drizzled on top.
