For one thing, it helps trap moisture and body heat, allowing the paste to oxidise more easily, creating a darker stain, that'll hopefully last longer, and for two, it helps protect the paste while it's drying, preventing things from coming into contact with it, or from it falling off. Another reason that as the paste dries, it has a tendency to crumble and fall off, which can stain clothes and sheets if it comes into contact with them (you are using henna to stain your skin after all ).
