    If you substitute the oil for water, you will cook the oatmeal as if to you would if you were boiling it. It would definitely come out mushy. The only way you can use water in your binders is if you dilute it with the sugar and then cook the sugar until it becomes syrup consistency, much like how you would make a caramel.

    Yes, but the taste may be a little off. If you would like to substitute canola oil, the best oils to use are peanut, corn, salad and sunflower oil.
