When rolling two dice or three dice it's only once die that actually counts?

If a player has three or more quarters, then they roll three dice. If a player has less than 3 quarters, he uses as many dice as he has quarters (1 quarter = 1 die, 2 quarters = 2 dice). All of the dice count, though. For example: I have three quarters in front of me, so I roll three dice that land on numbers 1, 4, and 5. I get to keep one (due to rolling a 1), I put one quarter in the middle (due to rolling a 4) and I pass one quarter to the left (due to rolling a 5).

How would this work if I used six dice?

Just use six quarters, using the same rules as normal. If a player has less then six dice, they would only roll as many dice as they have quarters.

As many as your table or space can hold. You can actually have one side of the table have a set of 3 dice and the other side have another set of 3 dice to make the game go faster for a large crowd.

If the last player has three quarters left, do they have to keep rolling clean until the last quarter?

Just make the rule before the game starts. It can be either way by saying "If they roll all 3 dice with 1, 2, or 3" without giving anything away would win. But if they don't, possibly the player left or right of them would end up rejoining the game.

We usually wait for the pot to be won. If you add money, Pause the game and give everyone the same number of added quarters each. I see that it's better to have someone win the pot and then start another game with 3 quarters or more to start.
