It depends on how much. If you trim like 3-4 it won't affect it much, it will just enlarge other leaves, but if all are cut off, that can kill the plant.

No, it's an annual plant. It won't come back. You can leave the seeds hanging in winter for the birds (and harvest some for planting next year), later cut them off and plant new seeds in spring.

How do I deadhead my sunflowers?

Sunflowers have a long stem called a peduncle; if it is cut in the middle, the remaining stem will dry out, making the plant unsightly. Prune down the peduncle to the node, that is where the new growth will come from.
