When I move photos to a new album, a copy stays in the camera roll. When I delete that photo, it removes it from the new album also. How do I avoid this?

Tap the picture in the album, and not in the camera roll. Then, choose 'delete from album,' not 'delete picture.' The picture will be gone from your album, but still be in the camera roll.

How can I choose the first photo in a folder?
