    I would set the oven at 350F. Spray the roasting pan with cooking spray or butter it. Cover the bottom with a layer of sauce (maybe 1/16" deep or so), add the chicken breasts, and cover with as much sauce as you like, but reserve some (like 4 tbsp) for later. Cover tightly. Roast for 15-20 minutes (these are already cooked, right?). Top with the reserved sauce, then mozzarella and broil for 3-4 minutes or until the cheese is melted and golden brown. Remove some of the sauce from the pan and spread on plate, then remove each breast and set on top of sauce. I like a nice fresh chiffonade of basil on top, but I love fresh basil!
