I would say that you're going to want keep them on sand. A very fine-grained gravel will work as well, too. Thick gravel is no good, though. The reasoning is kind of convoluted, but it has to do with their molting, so stick with sand or fine gravel.

Kind of, yes. They can climb out, which isn't the same as jumping. But yes, they can get out of a tank if there isn't a lid to keep it well-secured.

Drainage water can be used to supplement crops. However, the quality of the drainage water determines which crops can be irrigated. Highly saline drainage water cannot be used to irrigate salt-sensitive crops.
