One rule of thumb you can follow is that your wedding gift should be equal to the amount that the couple spent for you to be a guest at their wedding. For example, if the bride and groom spent $150 per person for food and beverage, you would give cash or a gift that is equal to that amount.

This is indeed the customary way to do this. Sure, with emancipation and equal rights finally finding a broad acceptance in our world, this can be a question. But it's only a very small aspect of the wedding day, and it can be cumbersome indeed to do it the PC way: "To Mr. [his first name] [his last name]-[her last name] and Mrs. [her first name] [his last name]-[her last name]", or do you put her last name before his? I wouldn't worry too much.

I am writing a check to a couple on their wedding day. Does the bride automatically have her married last name that day?

No, usually you would still write her maiden name on the wedding gifts. If you know them as close friends and feel comfortable taking a step ahead, you may write the groom's last name with the bride's on wedding envelopes. Or, avoid using last names altogether and just go with first names.
