Appetizers * Cheese board: Choose at least three different cheeses, then add some salami, prosciutto, cashews, olives, and grapes for color and variety. * Devilled eggs: For a festive flare, use beet juice to dye the whites a gorgeous purple color. * Finger sandwiches: Cut off the crusts and slice sandwiches in half; offer a variety of fillings such as egg salad, pimiento cheese, ham and cheese, and peanut butter and jelly. * Vegetable platter: Choose easy-to-eat veggies such as celery, baby carrots, broccoli, and cherry tomatoes, and add some dipping sauces such as hummus and ranch dressing. * Spring rolls: Use spring roll rice wrappers to wrap up bean sprouts, vermicelli rice noodles, thinly sliced cucumber and carrots, and cooked shrimp. Main Courses * Coconut fried shrimp: You can “cheat” and buy some frozen coconut shrimp to pop in the oven, or make your own on the stove top with jumbo shrimp, peeled and deveined, dipped in a batter of flour and shredded coconut and fried in some coconut oil. * Grilled chicken & veggie skewers: Try grilling vegetables and fruits such as onion, bell pepper, and pineapple alternated with cubes of chicken on a barbecue skewer. * Grilled hamburgers: You can grill up some beef patties as well as some veggie burgers for any vegetarian or vegan guests. Make sure to stock up on buns, sliced cheese, and all the condiments your guests will want. * Macaroni and cheese: To make your own version of this classic dish, cook some macaroni pasta, then make a roux on the stovetop with butter and flour, add your favorite shredded cheese (cheddar is always a winner) and stir until it’s melted into a creamy sauce. Pour the noodles and cheese sauce into a casserole dish, top with more shredded cheese, and bake in a 350° F oven for about 25 minutes. Desserts * Apple pie * Brownies * Chocolate chip cookies * Chocolate fondue (served with cubed angel food cake, brownie bites, strawberries, raspberries, bananas, and pretzels)
