Date
The softer the cheese, the faster it spoils. The expiration date is a good indicator of when the cheese is still good. To be safe, inspect and smell the brie before eating.
When stored properly — tightly wrapped in parchment paper then wrapped again in plastic wrap — brie will typically stay fresh for about 1 week after it has been opened.
Color
The first sign of spoilage is when the rind appears gray or flakey. Occasional darker spots are okay, but any presence of mold means the cheese should not be eaten.
Smell
As brie continues to age, it may give off a slight ammonia smell. This is not a sure sign of spoilage. If you notice this smell, unwrap the brie and let it air out for a few minutes. If the rind still smells a little but the creamy inside smells okay, then it’s still safe. If the inside still gives off hints of ammonia, throw it out.
Texture
If the creamy inside has become gooey, the cheese is still okay to eat but it may not taste as good and might cause an upset stomach.
If you notice a pungent odor along with a gooey inside, toss it!
