Vegetarian Kidney Bean Chili
Ingredients:
* 1 pound dried kidney beans
* 1 onion, chopped
* 2 bell peppers, chopped
* 2 cloves garlic, minced
* 1 tablespoon chili powder
* 1 teaspoon cumin
* 1 teaspoon paprika
* 1/2 teaspoon cayenne pepper
* 1 can (14 oz) diced tomatoes
* 3 cups vegetable broth
* Salt and pepper to taste
* Optional toppings: shredded cheddar cheese, sour cream, chopped cilantro, diced avocado
Instructions:
Rinse the dried kidney beans and soak them overnight in water.
Drain and rinse the beans and place them in a large pot with the onion, bell peppers, garlic, chili powder, cumin, paprika, and cayenne pepper.
Add the diced tomatoes and vegetable broth to the pot and bring to a boil.
Reduce the heat and simmer for 2-3 hours, or until the beans are tender.
Season with salt and pepper to taste, and serve with your choice of toppings.
