If you are getting primed for the season of Halloween bashes, you can spice up your party with spooky, delicious Black Cat cookies. These cookies will turn Black Cat's "bad luck" into a super-fun treat that is perfect for your Halloween bash.

Makes about 2 dozen Black Cats

Ingredients

  • â…” cup granulated sugar
  • ¼ cup coconut oil
  • ¼ cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup flour (plus extra for rolling out the dough)
  • ½ cup cocoa powder (plus extra for topping)
  • 1 tablespoon cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Optional Toppings

  • powdered sugar
  • marshmallows (or premade marshmallow topping)
  • icing
  1. Heating the oven before starting to mix your ingredients allows you to place the finished dough into the oven without waiting for the oven to stabilize. This helps minimize your uncertainty about when the oven is ready and also minimizes the variability in doneness.
    • Adjust the temperature if your cookies cook too quickly or too slowly.
    • Never leave a working oven unattended. [1]
  2. Place the granulated sugar, coconut oil, coconut milk, and vanilla extract in a large mixing bowl. Mix with an electric mixer on medium speed until smooth.
    • While mixing, stop several times to scrape off the sides using a rubber spatula.
    • This helps ensure that all ingredients are thoroughly and evenly combined.

  3. First, add the flour, cocoa powder, cornstarch, baking powder, and salt, then mix with a whisk until the mixture looks like light brown flour.
    • At this point, the color should be uniform. This indicates that all the dry ingredients are well-blended.
  4. [2]
    • Add the dry ingredients little by little and continue until the dough gets too thick for the mixer.
    • At this point, continue adding dry ingredients while mixing with a metal spoon or butter knife.
    • If the dough is loose, mix in additional flour a teaspoon at a time. [3] You are looking for dough that is firm, yet can be kneaded fairly easily.
  5. Wrap each half in a large piece of plastic wrap, making sure that each half is completely covered. Refrigerate the dough for about an hour until it is quite firm.
    • Prepare a flat surface for rolling out the dough: Clean the surface, dry the surface, then flour it well.
    • Remove one half of the dough from the fridge and place it in the middle of the floured surface. Using a floured rolling pin, roll out the dough to a thickness of ½-¾" (15-20 mm).
    • Cut out your cat shapes with a cookie cutter or a sharp knife.
    • Place the cut-outs on ungreased baking sheets about 1" (2.5 cm) apart.
      • If you press the dough at this point, do so gently. Otherwise, your cookies will not rise properly.
    • When you have finished placing the last cut-outs from the first half of the dough on the cookie sheets, gather the scraps. Then, knead them a little and add them to the second half of the dough.
    • Flour the surface and rolling pin again, then process the remainder of the dough.
    • When the edges of the cookies are firm, remove the baking trays from the oven.
  6. If cooling:
    • Let the cookies cool on baking sheets for about 5 minutes. Then, transfer the cookies to wire cooling racks with a metal spatula.
    • Allow the cookies to cool completely before serving.
  7. There are multiple ways to serve Black Cats:
    • Put Black Cats into little packets and hand them out as “Trick-or-Treat” goodies. Many parents do not let their kids eat such treats unless they know you, so it might be good to ask the parent if it is OK to give the bag to their child.
    • Serve Black Cats warm with a glass of milk.
    • Be the sweetest person in town and melt marshmallows over them (with a sprinkle of cocoa powder) and hand Black Cats out warm.
    • Make icing and decorate the cookies. Trail the icing along the edges, and make two dots for the eyes.
    • Lightly sprinkle powdered sugar over the top of the cookie.
    • Sell them before Halloween to benefit a charity.
    • Eat them warm with a cup of warm tea.
