- 6 tablespoons butter
- Few slices of white bread
- ¼ cup (72g) raw cashew nut butter
- 6 heaped tablespoons (128g) pure maple syrup or agave
- 1 teaspoon (5g) vanilla extract
- 2 tablespoons water
- 1 cup (108g) almond meal with skins
- 1 ½ (150g) quick cooking oats
- 2 tablespoons (13g) ground flaxseed
- 1 tablespoon (6g) ground cinnamon
- 1 teaspoon ground allspice
- ⅛ teaspoon fine sea salt
- ⅓ cup warm milk
- 2 tablespoons sugar
- 1 teaspoon dry active yeast
- 1 large egg
- ½ teaspoon salt
- 1 ½ - 1 ¾ cup all-purpose flour
- 2 tablespoons unsalted butter, softened
- ½ cup walnuts
- ½ cup pecans
- ½ cup dark brown sugar

Chocolate Chip No-Bake Cinnamon Roll Bites
- 1 cup milk chocolate chips
- Few slices of vanilla or chocolate cake
- 1 cup cinnamon sugar

Making Basic No-Bake Cinnamon Rolls

Soften the butter. There are a few ways to do this. You can either microwave the butter for 10-15 seconds, leave it out for 40-45 minutes, or you can pour a few cups of very hot (just below boiling) water into a double boiler, or saucepan with a metal bowl nested inside. Put the butter over the water bath and allow to soften. Keep an eye on it, however, so that the butter doesn't start to melt.

Roll out your bread. You can use a rolling pin for this. Your bread should be flat, but it shouldn't break. If it does end up breaking, then that means you have rolled it too much.

Spread the butter mixture evenly onto the bread. You can use either a knife or spoon to do this.

5Press the batter into a lined 9×5 loaf pan, flat and compact, not forgetting the edges. Place a piece of parchment on top and press down hard.

Making Walnut and Pecan No-Bake Cinnamon Roll Bites

1Whisk together the milk, sugar and yeast in a bowl and let it stand until frothy, for about five minutes.

2Transfer the mixture to the bowl of an electric mixer. With the paddle attachment, beat in the egg and salt on medium-high speed.

3Change to the dough hook and add 1 ½ cups of the flour and mix on medium speed until a somewhat smooth dough forms. This should take about 3-4 minutes.

4Reduce the speed to medium-low and add the butter and enough of the remaining flour so that the dough is not sticky, but smooth and soft.

5Transfer to an oiled boil, cover with plastic wrap and let rise in a warm place until doubled in bulk, about 1 to 1 ½ hours.

6Press the dough down then turn out onto a lightly floured surface. Knead two or three times then roll the dough out with a rolling pin.

7Cut small triangles out of the dough, about five inches long.

9Crush the walnuts and pecans. You can do this with a rolling pin.

10Soften the butter in the microwave, then mix the cinnamon and sugar into the butter.
