If you like caesar salad you'll love this recipe. Although it adds the benefits of having a protein added (chicken and cheese), it's also very heart-healthy with several vegetables and essentials.

Ingredients

  • 3 cloves garlic (to taste)
    • Garlic is used to help season the croutons and create the caesar dressing, according to the original recipe.
  • .5 (1/2) cup extra virgin olive oil
  • juice of 1 lemon
  • salt (to taste)
  • 1 lb boneless chicken breasts
    • Store-bought packages send them out skinless, yet personal recipes and the reference recipe use skin-on. The choice will be yours, but the skin-on version provides extra fat.
  • 4 slices focaccia/whole wheat Italian bread (croutons)
    • If you don't have time to make croutons, try to find croutons in your local supermarket.
  • 4 romaine lettuce hearts, halved lengthwise
  • (3/4) cup freshly grated parmesan cheese
  • 2-4 chopped anchovies (optional)

  3. 3
Create the croutons . The original recipe calls for focaccia or whole-wheat Italian bread, but you can use whichever method this weaved link calls for using these breads as well.
  4. 4
Create the caesar dressing . What would a chicken caesar salad be without it's caesar dressing?

Part 2 of 2:

Combining the Pieces Together

  1. 1
Cut up the 4 romaine lettuce hearts. This creates the main salad portion. Use a medium-sized dish and a chopping knife to cut these, without chopping too fine. This creates the backbone of the dish - that makes this grilled chicken caesar salad - a salad.
  2. 2
Place in the dish the solid ingredients. Add the grilled chicken pieces, followed by the cheese and the salt and/or pepper. You will want to avoid stirring in the croutons until the end, but the cloves can also be added.
    • If you'd like, you can also chop up some anchovies, and add them to the dish, though very few grilled chicken Caesar recipes call for them.
  3. 3
Juice the lemon and squeeze the lemon juice on the dish. This creates a flavor that very few - if any - store brands add. Lemon juice gives it that "zing" of citrus that some places make well aware of added zest.
    • Avoid using lime juice. It doesn't give this dish the same zing that lemon juice gives it.
  4. 4
Dress your salad. Add the half cup of extra virgin olive oil.
  5. 5
Mix your salad so most of the pieces are interspersed throughout.
  6. 6
Place on the caesar dressing. You'll want to spread some of the caesar dressing on the salad - at your enjoyment amount.
  7. 7
Add some of the croutons to your salad. Sprinkle a few pieces sporadically across the top of the salad.
  8. 8
Mix the salad again. This will combine the salad from before with the caesar dressing and croutons to further spread the dressing and croutons throughout the dish.
  9. 9
Add the remainder of the croutons to the top of the dish.
