It might help to think of it more like a poem when you're writing it rather than a rap, or else just rap along to a simple beat or rhythm, you can always adapt it later to be faster or slower as needed. As for the latter question, some rapper are just good performers, they're basically doing the same thing actors do, reading the words of others.
